Tournant (Finance)



Job Description Summary

The Tournant is a highly versatile and essential member of the culinary team. This role is not confined to a single station; instead, the Tournant rotates between various kitchen sections, to provide expert support and ensure operational continuity. This position is critical for maintaining efficiency and a high standard of service during peak hours, staff shortages, or when specific stations require additional assistance.

The Tournant plays a key role in delivering Sonesta's mission of providing exceptional service to both guests and colleagues. This position is primarily responsible for preparing and producing food orders that meet our high-quality standards. The ideal candidate will have a passion for hospitality and a commitment to maintaining a safe, clean, and sanitary work environment.

Job Description

Work Environment

This position requires working indoors in a fast-paced service environment, where you'll need to tolerate extreme temperatures and be able to work at any station in the Main kitchen, Outlet kitchen and Banquet kitchen. This position reports to Executive Chef and Sous Chefs.

Qualifications

  • High school diploma or culinary training/certification
  • 2+ years experience as a Line Cook in a 4-5 star hotel or fine dining environment
  • ServSafe or NYC Food Protection Certification required
  • Must be required to organize and store food deliveries in compliance with the New York Health Department's storage guidelines.
  • Strong multitasking, time management, and communication skills
  • Ability to lift, carry, and stand for extended periods in hot, fast-paced environments
  • Must be able to follow recipes and adapt to changing kitchen needs

Expected Hours of Work

  • Flexibility to work variable days, including weekends and holidays, is required.
  • Flexibility to work variable shifts (days, nights, overnights) is essential.

Key Responsibilities

  • Rotate between all kitchen stations (hot line, cold line, banquets, breakfast, etc.)
  • Prepare and cook menu items following recipes and plating guidelines
  • Assist with prep for current and next meal services
  • Maintain cleanliness and organization of workstations
  • Follow opening and closing procedures, including proper storage and labeling
  • Communicate effectively with chefs and front-of-house staff
  • Support banquet plating, off-site functions, and kitchen inventory as needed
  • Comply with all sanitation, health, and safety standards
  • Minimize waste and assist in controlling food costs

Pay Range

uuaHourly compensation range is $25.40 - $33.87. Base pay offered may vary depending on various factors, including but not limited to job-related knowledge, skills, and specific/overall experience.
